How to use baobab powder: 6 easy ways
Baobab powder is pale and tangy. Add it to juice, uji, yoghurt and baking.
Baobab powder comes from the dried pulp inside the fruit of the baobab tree, called mbuyu in Swahili. It is a pale cream powder that smells faintly sweet and tastes tangy and a little sour, like a citrus sweet. It dissolves in liquid and thickens slightly.
How much to use
Use 1 teaspoon for a glass of juice, water or milk, or 1 to 2 teaspoons for a bowl of porridge or yoghurt. Stir it well or use a blender. The powder clumps if you add it to a hot liquid without whisking.
Ways to use it
- Baobab drink. Whisk 1 teaspoon into a glass of cold water with a spoon of sugar or honey and a squeeze of lime.
- Uji and porridge. Stir 1 teaspoon into the bowl after cooking. Cooking it for a long time dulls the tang.
- Smoothies. Blend it with banana, mango and milk or yoghurt.
- Yoghurt and fruit. Stir 1 teaspoon into plain yoghurt and top with chopped fruit.
- Baking. Replace 1 or 2 tablespoons of the flour in muffins or pancakes with the powder for a tangy crumb.
- Ice lollies and sorbet. Mix with juice and sugar, then freeze.
Keeping it fresh
Keep it in a tightly closed container in a cool, dry cupboard. The powder takes up damp and clumps. Use a dry spoon, and use within about a year.
Which pack to choose
It comes in a 100g pack. At a teaspoon a day, that lasts a few weeks, so one pack is a good start for a household.
