How to use mondia whitei (mukombero): a simple guide
Mondia whitei, or mukombero, is a fragrant root used in tea and as a chew. Here is how it is used.
Mondia whitei is a climbing plant that grows in East and West Africa, known in Kenya as mukombero. The part we sell is the root. It has a sweet, warm smell, often described as like vanilla and ginger together, and tastes woody and a little sharp.
How much to use
Use a small piece, about the size of your thumbnail, or half a teaspoon of powder, for a cup of tea. Start with a little. The taste is strong and some people prefer it mixed with milk, honey or other tea spices.
Ways to use it
- Simmered in chai. Boil a small piece of root in water for 5 to 10 minutes, then add tea leaves and milk and simmer.
- As a flavouring in tea. Add half a teaspoon of powder or a small piece to a pot of black tea with ginger and honey.
- Chewed, the traditional way. Many people chew a small piece of the root slowly and spit out the fibres. It tastes sweet and woody at first.
- Steeped in hot water. Pour boiling water over a small piece in a flask, leave for 15 minutes and sweeten with honey.
- With other tea spices. Combine with cinnamon, cloves and cardamom in your tea masala for a deeper flavour.
Keeping it fresh
Keep it in a closed container in a cool, dry cupboard, away from sunlight and damp. Keep roots completely dry so they do not go mouldy. If the smell turns musty, throw it away.
Which pack to choose
It comes in a 100g pack. A small piece goes a long way, so this lasts a good while. Try it in tea first before deciding how much you need.
Good to know
If you are pregnant, breastfeeding, or take any medicine, ask your doctor before using it.
